Slow-roasted cajun pork loin with flavorful pan sauce.
Ingredients:
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon ground mustard
  • 1 (4 pound) pork loin roast
  • 2 carrot, cut into 1/2 inch pieces
  • 1 red bell pepper, cut into 1/2 inch pieces
  • 1 stalk celery, cut into 1/2 inch pieces
  • 1 large onion, cut into 1/2-inch pieces
  • 3 tablespoons all-purpose flour
  • 0.5 cup chicken broth
Instructions:
  • Preheat oven to 300°F (150°C) for the perfect baking temperature.
  • In a small skillet over medium heat, melt butter. Add cayenne, oregano, pepper, thyme, mustard, and garlic, and cook for 1 minute. Using a paring knife, make small incisions in the fat side of the meat. Fill the slits with the spice mix, then rub the remaining mix over the meat's surface. Sprinkle roast with salt and pepper.
  • In a roasting pan, warm the olive oil over medium heat. Add the roast, arrange the carrots, red pepper, celery, and onion around it. Season the veggies lightly with salt and pepper. Transfer the pan to a preheated oven and bake for 1 hour and 45 minutes. Then, raise the oven temperature to 425°F and cook for an extra 15 minutes for a nicely browned roast. Ensure the meat reaches 145°F (63°C). Take the roast out of the pan and rest for 10 minutes before slicing.
  • - Heat the roasting pan with pan juices over medium heat. Stir in flour with hot drippings and cook for 3 minutes. Add chicken stock, cook for 6 minutes, occasionally whisking. Strain sauce and serve with sliced pork roast.
