Cajun roasted smash potatoes recipe

Elevate your roast potatoes with our flavorful garlic-spiced Cajun twist.
Ingredients:
  • 2kg white washed potatoes
  • 36.40 gm extra virgin olive oil
  • 1 long red chilli, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 58.75 gm sour cream
  • 125.00 ml fresh coriander leaves
  • 4.80 gm garlic salt
  • 1 tsp dried thyme
Instructions:
  • 1. Preheat your oven to 200C/180C fan-forced and grease a large baking tray. 2. Arrange potatoes on a large microwave-safe plate lined with paper towel. Drizzle 1 tablespoon of water over the potatoes and cover them with another piece of paper towel. 3. Microwave on HIGH for 6 to 8 minutes until the potatoes are just tender.
  • Prepare the Cajun Spice Mix by mixing garlic salt, paprika, thyme, oregano, and cayenne pepper in a bowl.
  • Place potatoes on tray and gently crush each with a potato masher. Drizzle with oil, sprinkle spice mix, and roast for 20-25 minutes.
  • Season potato with a kick of chili and garlic, roast until crispy and tender, then transfer to a dish. Sprinkle with salt, top with a dollop of sour cream, and finish with fresh coriander. Enjoy!
