Cajun Turkey Gravy

Exciting Cajun-style turkey gravy inspired by fast food, a must-have for Thanksgiving!
Ingredients:
  • 1 package of giblets and neck from a turkey
  • 1 teaspoon vegetable oil, or to taste
  • 2 tablespoons minced green bell pepper
  • 2 cups water
  • 1 (14 ounce) can turkey broth
  • 2 tablespoons cornstarch
  • 0.5 cup cooked turkey, cut into small cubes
  • 2 teaspoons milk
  • 2 teaspoons distilled white vinegar
  • 1 teaspoon white sugar
  • 0.5 teaspoon coarsely ground black pepper
  • 0.125 teaspoon garlic powder
  • 0.125 teaspoon onion powder
  • 1 pinch dried parsley flakes
Instructions:
  • In a saucepan, cover the giblets and neck with water by 2 inches. Bring to a boil, then simmer on low for 30 to 45 minutes until cooked through. Transfer to a cutting board.
  • Finely mince the heart, liver, and gizzard meat, reserving 1/3 cup. Remove the meat from the neck and finely mince it. Mash the neck meat in a mortar and pestle.
  • In a large saucepan over medium-high heat, saute the green bell pepper in hot oil until fragrant and slightly softened, about 1 minute. Add water and broth to the saucepan and whisk in cornstarch and flour until smooth.
  • Combine minced meat, mashed neck meat, cubed turkey, milk, vinegar, sugar, salt, black pepper, cayenne pepper, garlic powder, onion powder, and dried parsley flakes in broth. Bring to a boil, then simmer on low heat for 30-35 minutes until gravy thickens, whisking occasionally.
