Quick and flavorful Cajun turkey scallopini, ready in under 20 minutes for busy weeknights.
Ingredients:
  • 0.25 cup all-purpose flour
  • 1.25 teaspoons Cajun seasoning, divided
  • 1 pound turkey cutlets
  • 2 tablespoons olive oil
Instructions:
  • Mix together flour and 1 teaspoon of Cajun seasoning in a shallow dish. Coat turkey cutlets in the flour mixture, shaking off any extra.
  • In a large skillet over medium-high heat, heat oil. Cook turkey until no longer pink in the center, about 2 to 3 minutes per side. Transfer turkey to a serving platter and keep warm.
  • Pour in the wine and sprinkle in the rest of the Cajun seasoning into the skillet. Let it simmer until the liquid is reduced by half, stirring to scrape off the flavorful bits from the bottom of the skillet, for about 1 to 2 minutes. Drizzle the sauce over the turkey and serve hot.
