Sautéed zucchini, peppers, onion, and corn with melted Monterey Jack cheese for a delicious side dish.
Ingredients:
  • 2 tablespoons olive oil
  • 0.5 green bell pepper, diced
  • 1 small sweet onion, diced
  • 2 zucchini, quartered lengthwise and then cut crosswise into 1/2-inch pieces
  • 0.33333334326744 cup half and half
  • 1 cup corn kernels
  • 0.5 cup shredded Monterey Jack cheese
Instructions:
  • In a large skillet over medium heat, heat oil and butter. Add garlic, bell pepper, onion, and zucchini. Sauté until zucchini starts to soften, about 5 minutes. Stir in salt, pepper, half and half, and corn. Cover, simmer on low heat for 5 minutes. Remove from heat, sprinkle Monterey Jack cheese on top. Cover again and let it sit until cheese melts, 2 to 3 minutes.
