Spicy Calabrian chili orzo with veggies is a delicious side dish, balanced perfectly with creamy crème fraîche, ideal with salmon.
Ingredients:
  • 6 ounces orzo
  • 2 tablespoon crème fraîche
  • 1 to 2 teaspoon Calabrian chili paste
  • 1 teaspoon olive oil
  • 1 to 2 zucchini, cut lengthwise and sliced into half moons
  • 1/2 cup sliced sweet peppers
  • 2 garlic cloves, minced, or more to taste
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
Instructions:
  • 1. Boil salted water, cook orzo for 8-10 minutes, then drain. Return orzo to pot, stir in crème fraîche and Calabrian chili paste. Keep warm.
  • Preheat a skillet over medium-high heat and add a drizzle of olive oil. Sauté the vegetables for 4 to 5 minutes until tender. Stir in garlic and cook until fragrant. Season with Italian seasoning, salt, and pepper, then remove from heat.
  • Combine the vegetables with the orzo, stirring delicately. Serve promptly.
