Savory Filipino beef stew with chorizo, onions, and potatoes.
Ingredients:
  • 2 pounds beef chuck, cubed
  • 12 ounces chorizo sausage
  • 0.25 cup garlic, minced
  • 0.25 cup white vinegar
  • 0.25 cup soy sauce
  • 2 tablespoons olive oil, or as needed
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 cups tomato sauce
  • 2 cups peeled and cubed potatoes
  • 1 cup drained canned peas
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
Instructions:
  • In a skillet over medium heat, sauté beef and chorizo with garlic, vinegar, and soy sauce until beef is browned and liquid is reduced, approximately 20 minutes. Remove from heat.
  • Heat olive oil in a pot over medium heat. Sauté onion and bell pepper until onion is translucent. Stir in tomato sauce and simmer until slightly reduced.
  • Combine the beef-chorizo mixture with the tomato sauce; bring to a boil. Lower the heat, cover, and simmer for 30 to 40 minutes.
  • Mix in the potatoes, peas, salt, and pepper into the stew and let it simmer until the beef is tender and the potatoes are cooked, for 20 to 30 minutes. Add water as necessary.
