Delicious Filipino beef stew with sweet and savory flavors, a twist on the traditional goat meat version.
Ingredients:
  • 3 tablespoons vegetable oil
  • 1.5 pounds cubed beef stew meat
  • 3 cloves garlic, crushed
  • 3 cups water
  • 0.5 cup unsweetened pineapple juice
  • 1 (14 ounce) can tomato sauce
  • 0.25 cup tomato paste
  • 2 red potatoes, diced
  • 1 red bell pepper, sliced
  • 1 large carrot, sliced diagonally
  • 0.5 pound miniature cocktail sausages
  • 1 (8 ounce) can pineapple chunks, undrained
  • 1 (6 ounce) can medium pitted ripe olives, drained
  • 3 large bay leaves
  • 1 tablespoon hot pepper sauce (such as Tabasco®)
Instructions:
  • In a large pot over medium heat, sizzle the beef with garlic in vegetable oil until golden brown, about 10 minutes. Add salt, black pepper, water, pineapple juice, onion, tomato sauce, and tomato paste. Bring to a boil, then reduce heat to low and simmer until the beef is almost tender, 35 to 45 minutes.
  • Combine potatoes, red bell pepper, carrot, mini sausages, pineapple with juice, olives, and bay leaves in the stew. Simmer until potatoes are tender, approximately 20 minutes. Add hot pepper sauce, salt, and black pepper to taste.
