Spicy summer salad, great with Asian dishes. Swap wasabi paste for powder if needed. Adjust dressing with more mayo if too spicy.
Ingredients:
  • 0.5 cup uncooked white rice
  • 1 small head iceberg lettuce, shredded
  • 1 English cucumber, cut into 1 inch strips
  • 2 avocados - peeled, pitted, and cubed
  • 2 cups shredded imitation crabmeat
  • 2 teaspoons wasabi powder, or to taste
  • 1 tablespoon mayonnaise
  • 1 tablespoon soy sauce
  • 0.25 cup rice wine vinegar
  • 1 tablespoon white sugar
  • 1 teaspoon sesame oil
Instructions:
  • In a small saucepan, bring rice and water to a boil. Cover, lower heat to simmer, and cook for 20 minutes or until rice is tender. Allow to cool.
  • Combine lettuce, cucumber, avocado, and imitation crabmeat in a large serving bowl. Add cooled rice. In a small bowl, mix wasabi powder, mayonnaise, soy sauce, rice vinegar, sugar, and sesame oil. Dress salad with the prepared dressing or serve it on the side.
