Stay in and create homemade Japanese cuisine with ease!
Ingredients:
  • 215g rice
  • 250ml water
  • 80ml mayonnaise
  • 2 hard-boiled eggs, peeled
  • 1 lebanese cucumber, finely chopped
  • 1 carrot, peeled, finely chopped
  • 21.60 gm hoisin sauce
  • 4 nori sheets
  • 1/2 ripe avocado, stone removed, peeled, sliced
  • Salt reduced soy sauce, to serve
Instructions:
  • Place the rice in a large sieve and rinse under cold running water, stirring occasionally until the water runs clear to remove excess starch. Drain the rice.
  • In a medium saucepan, blend the rice and water over high heat. Once boiling, cover and simmer over low heat for 12 minutes until the water is fully absorbed. Let it sit covered to cool slightly.
  • In a bowl, blend the mayonnaise and eggs together using a fork until creamy.
  • Mix the cucumber, carrot, and hoisin sauce together in a bowl.
  • Lay a nori sheet, shiny-side down, on a sushi mat. Gently spread a quarter of the rice evenly over the nori sheet using wet hands, making sure to leave a 2cm border at one short end.
  • Spread a generous amount of the delicious egg mixture on top of the rice, followed by a portion of the refreshing cucumber mixture. Add creamy avocado slices on top. Roll up the sushi mat tightly to ensure the filling is neatly tucked inside. Repeat these steps to create a total of 4 mouthwatering rolls.
  • Slice the sushi rolls into elegant 1.5cm pieces and present with a side of soy sauce.
