Make delectable California rolls easily at home.
Ingredients:
  • 600.00 gm sushi rice
  • 1000.00 gm water
  • 82.50 ml rice vinegar
  • 40.00 ml mirin
  • 40.00 gm caster sugar
  • 8 sheets nori (seaweed sheets)
  • 1 large Lebanese cucumber, cut into thin strips
  • 1 avocado, peeled, cut into thin slices
  • 12 seafood sticks or crabsticks
  • Japanese soy sauce, to serve*
  • Wasabi paste, to serve
Instructions:
  • Rinse rice under cold water until water is clear. Transfer rice to a large non-stick saucepan. Pour in water and bring to a boil over high heat. Once boiling, lower heat to medium and simmer for 5 minutes until small holes appear. Cover, reduce heat to low and cook for 15 minutes. Remove from heat and let stand covered for 10 minutes before serving.
  • In a small saucepan over low heat, gently heat vinegar, mirin, sugar, and salt. Stir continuously for 3 minutes or until the sugar is completely dissolved. Chill in the refrigerator until cold.
  • Spread the rice evenly over a large tray, then gently drizzle the vinegar mixture over the rice. Use a wooden spoon to make cutting strokes into the rice, distributing the vinegar mixture without stirring.
  • Lay a sheet of nori, shiny side facing down, on a bamboo mat or baking paper. Spread 3/4 cup of rice mixture over the nori, leaving a 3cm border. Add cucumber strip, avocado slice, and seafood stick about 3cm from the edge. Roll up with the mat or paper as a guide. Repeat with remaining ingredients, then cut each roll into 6 pieces. Serve with wasabi and soy sauce.
