California-style tortilla stack: Crispy tortillas topped with black beans, rice, tomatoes, and avocado for a delicious and simple twist on tacos.
Ingredients:
  • 3 tomatoes, seeded and chopped
  • 2 avocados, chopped
  • 1 small onion, chopped
  • 0.25 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 lime, juiced
  • 2 tablespoons vegetable oil
  • 8 corn tortillas
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 cup cooked white rice
  • 2 tablespoons chopped fresh cilantro
  • 1 dash green pepper sauce (such as Tabasco®), or to taste
Instructions:
  • Combine fresh, ripe tomatoes, creamy avocados, diced onion, a quarter cup of vibrant cilantro, and minced garlic in a bowl. Gently drizzle zesty lime juice over the mixture and toss until evenly coated.
  • Warm vegetable oil in a skillet over medium heat. Crisp up tortillas in batches of 2 at a time for about 1 minute per side. Use tongs to remove and continue with remaining tortillas.
  • Spoon a generous amount of black beans and rice onto each crisp tortilla, then add tomato mixture on top. Finish off by garnishing the tacos with cilantro and green pepper sauce.
