Calypso melon cocktail

Transport to the tropics with this refreshing island cocktail.
Ingredients:
  • 1/2 large honeydew melon, peeled, seeded, chopped
  • 10.00 gm caster sugar
  • 20.00 ml chopped fresh mint
  • 250ml (1 cup) Midori liqueur
  • 2 x 750ml btls chilled sparkling white wine
Instructions:
  • Blend the honeydew and sugar in a food processor until silky. Pass through a sieve into a big jug. Mix in the mint. Cover and chill until needed.
  • In a serving glass, add 2 1/2 tablespoons of the honeydew mixture, stir in 1 tablespoon of Midori, and top with sparkling wine. Repeat with the remaining honeydew mixture, Midori, and sparkling wine.
