Camille's Buttermilk Pound Cake

Decadent buttermilk pound cake baked in a fancy tube pan.
Ingredients:
  • 1 cup vegetable shortening (such as Crisco®)
  • 2 cups white sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.75 teaspoon salt
  • 1.5 cups buttermilk
  • 2 teaspoons confectioners' sugar for dusting
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and give a gentle greasing to a 9-inch fluted tube pan, like a Bundt®.
  • In a mixing bowl, cream together vegetable shortening and sugar until light and fluffy using an electric mixer. One at a time, blend in the eggs, making sure each egg is fully combined before adding the next. Stir in the vanilla extract into the egg mixture.
  • Combine flour, baking soda, baking powder, and salt in a bowl. Gradually mix into the liquid ingredients, alternating with buttermilk, until a smooth batter forms. Transfer batter to prepared tube pan.
  • Bake in the preheated oven for about 1 hour until the cake is lightly browned and a toothpick inserted into the middle comes out clean. Cool the cake and dust with confectioners' sugar.
