Tangy grapefruit sorbet with a bold splash of Campari - a refreshing twist on a classic favorite.
Ingredients:
  • Juice of 4 pink grapefruit
  • 125g caster sugar
  • 125ml campari
Instructions:
  • Pour the freshly strained grapefruit juice into a saucepan, add sugar, and stir gently over low heat until the sugar completely dissolves. Let it cool, then stir in the Campari. Transfer the mixture into a shallow container and freeze until edges are solid. Take it out of the freezer and beat it with an electric beater until fluffy. Return to the container and freeze again. Repeat this step 2 to 3 times for a smoother texture. Alternatively, use an ice-cream machine per the manufacturer's instructions. Once the sorbet is firm, scoop it into serving cups and top with a drizzle of extra Campari before serving.
