Spicy chicken enchiladas with creamy filling, baked to perfection with a kick of Pace Picante Sauce. Easy and irresistible.
Ingredients:
  • 1 (10.75 ounce) can Campbell's® Condensed Cream of Chicken Soup (Regular, 98% Fat Free or Healthy Request®)
  • 0.5 cup sour cream
  • 1 cup Pace® Picante Sauce
  • 2 teaspoons chili powder
  • 2 cups chopped cooked chicken
  • 0.5 cup shredded Monterey Jack cheese
  • 6 flour tortillas (6"), warmed
  • 1 small tomato, chopped
  • 1 green onion, sliced
Instructions:
  • Combine the soup, sour cream, picante sauce, and chili powder in a medium bowl and mix well.
  • Combine 1 cup of picante sauce mixture with chicken and cheese in a large bowl, stirring well.
  • Spread the chicken mixture evenly onto the tortillas, then gently roll them up and arrange them with the seam side up in a shallow 11x8-inch baking dish. Drizzle the remaining picante sauce mixture over the rolled tortillas and cover the dish.
  • Bake at 350 degrees F for 40 minutes or until the enchiladas are hot and bubbling. Sprinkle with fresh tomato and onion.
