Homemade candied peel: soft, chewy, and bittersweet delight.
Ingredients:
  • 2 oranges, quartered then peeled
  • 500ml water
  • 210g caster sugar
  • Dark chocolate, melted, to coat
Instructions:
  • Cut the peel into 1cm-thick batons, place in a saucepan, cover with cold water, and bring to a boil. Cook for 5 minutes, drain well, and repeat the process.
  • In a saucepan, mix boiled peel, water, and sugar. Cook over low heat, stirring, until sugar dissolves, about 5 minutes. Raise heat and bring to a boil. Cook, stirring occasionally, until peel turns translucent and tender, about 5 minutes. Place rind on a wire rack to cool completely. Optional: dip in chocolate for an extra touch.
