Candy cane cookies 'n' cream ice-cream

Create a festive treat by mixing candy canes and crushed Oreos into rich homemade vanilla ice cream.
Ingredients:
  • 750ml thickened cream
  • 250ml milk
  • 100g white chocolate, chopped
  • 8 Free Range Egg yolks
  • 150g caster sugar
  • 1 tsp peppermint essence
  • 25g candy canes, crushed
  • 2 x 23g pkts Mini Oreo biscuits, crushed
Instructions:
  • In a large saucepan over medium heat, unite the cream, milk, and chocolate until they reach a simmer.
  • Using an electric mixer, whip the egg yolks and sugar in a bowl until thick and pale.
  • Whisk hot cream into egg mixture slowly and steadily until well combined. Return to pan over medium-low heat, stirring with a wooden spoon for 5 mins until custard slightly thickens. Remove from heat, let cool, then stir in peppermint essence.
  • Transfer the mixture into a shallow metal container. Cover with foil and freeze for 4 hours or until set.
  • Break up the ice cream using a metal spoon. Transfer quickly to a food processor and blend until smooth. Gently mix in candy cane and biscuit. Spread the mixture into a metal loaf pan, cover with foil, and freeze for 3 hours or until firm.
