Transport your taste buds to Italy with a simple 4-ingredient freezer dessert featuring creamy soymilk.
Ingredients:
  • 2 cups cubed cantaloupe or honeydew melon
  • 2 cups soymilk
  • 3 tablespoons honey
  • 3/4 teaspoon ground ginger
Instructions:
  • In a blender or food processor, combine all ingredients and blend on high for about 30 seconds until smooth. Transfer the mixture to an 8- or 9-inch square glass baking dish.
  • Place in the freezer for 30 minutes, then stir with a fork once ice crystals start forming. Continue freezing for 2.5 to 3 hours, stirring every 30 minutes, until mixture is firm.
  • Ladle the dish into separate bowls for serving.
