Cantaloupe Muffins with Praline Topping

Infuse muffins with cantaloupe puree and top with pecans for a unique and refreshing flavor.
Ingredients:
  • 0.75 cup chopped pecans
  • 0.5 cup brown sugar
  • 0.5 cup all-purpose flour
  • 3 tablespoons butter, softened
  • 1 cup white sugar
  • 1 cup pureed cantaloupe
  • 1.5 teaspoons vanilla extract
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 0.5 cup finely diced cantaloupe
  • 1 teaspoon lemon zest, or to taste
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then prepare your 10 jumbo muffin cups by greasing them or lining them with paper muffin liners.
  • Combine pecans, rich brown sugar, a half cup of flour, and lusciously soft butter in a bowl until the mixture resembles delightful crumbs.
  • In a bowl, use an electric mixer to blend 1 cup of white sugar and oil until smooth. Add eggs one at a time, beating thoroughly after each addition. Mix in pureed cantaloupe and vanilla extract.
  • In a mixing bowl, combine 1 1/2 cups of flour, baking powder, cinnamon, and salt, whisking them together. Add the flour mixture to the cantaloupe puree, fold in cantaloupe chunks and lemon zest gently. Pour the batter into the prepared muffin cups.
  • After baking for 25 minutes, sprinkle pecan mixture over each muffin, then bake for an additional 10 minutes until a toothpick inserted in the center comes out clean. Let them cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
