A refreshing twist on the classic Italian salad, perfect for a summer day.
Ingredients:
  • 2 red peppers
  • 4 balls of good-quality mozzarella cheese
  • 400 g ripe cherry tomatoes
  • extra virgin olive oil
  • 1 bunch of fresh basil (30g)
Instructions:
  • Char the peppers over an open flame or under a hot grill until blackened and blistered, turning occasionally. Place the blackened peppers in a bowl, cover with clingfilm, and let them steam for 10 minutes. Remove the clingfilm and allow the peppers to cool. Peel off the blackened skin and remove the seeds. Tear the mozzarella into chunks and divide among 4 plates. Tear the peppers into strips and distribute over the mozzarella. Halve the tomatoes and scatter on top. Season with salt and pepper, drizzle with olive oil, and sprinkle torn basil leaves before serving.
