Mouthwatering cannellini bean salad with a twist of caprese, ideal for pairing with grilled chicken or fish.
Ingredients:
  • 1 (15.5-ounce) can cannellini beans, rinsed and drained
  • 5 ounces cherry tomatoes, halved
  • 4 ounces mini fresh mozzarella balls (perlini)
  • 6 large basil leaves, thinly sliced
  • salt and freshly ground black pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup balsamic glaze, or as needed
Instructions:
  • Combine beans, tomatoes, mozzarella balls, basil, and olive oil in a spacious bowl. Mix well to evenly coat; season generously with salt and pepper.
  • To plate the salad, evenly distribute onto individual plates and generously drizzle each serving with 1 tablespoon of balsamic glaze.
