Cannellini bean dip

Savory cannellini bean dip pairs perfectly with crispy bread.
Ingredients:
  • 1 French stick, very thinly sliced
  • Olive oil spray
  • 2 x 400g cans cannellini beans, rinsed and drained
  • 42.00 gm lemon juice
  • 3 anchovy fillets, finely chopped
  • 2 cloves garlic, crushed
  • 40.00 ml capers, rinsed
  • 1 red onion, finely chopped
  • 250.00 ml fresh basil leaves, finely chopped
Instructions:
  • Preheat the oven to 180°C. Place bread slices on baking trays, generously spray with oil, and bake for 10 minutes until crispy.
  • Mash beans with a fork. In a jar, combine all ingredients except onion and basil. Shake vigorously to blend. Mix the dressing into the beans until well combined.
  • Before serving, gently mix the onion and fresh basil into the bean dip, then transfer the dip to a serving bowl. Enjoy with some toasted bread.
