Portable canellini bean salad with feta is a versatile, nutrient-packed side dish that pairs perfectly with grilled meats. Easy and delicious for picnics or potlucks.
Ingredients:
  • 2 tablespoons freshly-squeezed lemon juice
  • 1 large garlic clove, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon anchovy paste (optional)
  • 1/4 cup extra virgin olive oil
  • salt and pepper to taste
Instructions:
  • Combine lemon juice, garlic, Dijon mustard, and anchovy paste in a small bowl. Slowly drizzle in olive oil while whisking until smooth and creamy. Season with salt and pepper to taste.
