Delicious cheese and capsicum sandwiches, perfect for a picnic by the pool or beach.
Ingredients:
  • Olive oil spray
  • 1 red capsicum, quartered, deseeded
  • 8 slices wholegrain bread
  • Butter, at room temperature, to spread
  • 70g bought basil pesto
  • 40g (1 cup) rocket leaves
  • 80g extra tasty cheddar, thinly sliced
Instructions:
  • Preheat the grill on high. Lightly grease a large baking tray with olive oil spray. Arrange the capsicum skin-side up on the tray and lightly spray with more olive oil. Grill for 5 minutes until charred and blistered.
  • Place in a sealable plastic bag and let sit for 5 minutes to make peeling the skin easier. Remove skin from the capsicum and slice the flesh into thin strips.
  • Butter half of the bread and spread the rest with pesto. Layer rocket, capsicum, and cheddar on the buttered bread, then top with remaining bread, pesto-side down. Trim crusts with a serrated knife and cut into fingers before serving.
