Create delicious and easy chicken and cheese quesadillas by assembling ingredients in tortillas and pressing them for a satisfying meal.
Ingredients:
  • 500.00 ml cooked shredded chicken
  • 75.00 gm basil pesto
  • 8 wholemeal tortillas
  • 165.00 ml grated reduced-fat mozzarella cheese
  • 125.00 ml sliced roasted red capsicum
  • 50g baby rocket
Instructions:
  • Preheat the oven to 160°C/140°C fan-forced. Line a large baking tray with baking paper and preheat a sandwich press.
  • In a bowl, mix the chicken with the pesto. Spread the chicken mixture evenly over 4 tortillas on a flat surface. Sprinkle cheese, capsicum, and rocket over the chicken mixture. Cover with the remaining tortillas.
  • Lay 1 stack of tortillas in sandwich press until golden and cheese melts (2-3 minutes). Transfer to baking tray and keep warm in oven. Repeat with remaining tortilla stacks.
