Pesto Chicken and Potatoes in Parchment Packets

Effortlessly bake a delicious meal by wrapping chicken, potatoes, and pesto in parchment paper packets.
Ingredients:
  • 1 large red potato
  • 2 (15x24-inch) pieces of parchment paper
  • salt and ground black pepper to taste
  • 10 fresh basil leaves
  • 1 small onion, thinly sliced
  • 2 whole chicken legs, skin and bones removed
  • 0.5 cup prepared pesto
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Thinly slice the potato to about 1/8-inch thickness and soak the slices in a bowl of water to keep them from turning brown.
  • Take a large piece of parchment paper and fold it in half to make two 15x12-inch rectangles. Drain the potatoes and place half of the slices in a semi-circle on one side of the parchment paper, overlapping them. Sprinkle with salt and pepper, add 5 basil leaves, and half of the onion slices. Repeat the process with the second piece of parchment paper.
  • Layer chicken legs on a bed of savory onion slices, season with a touch of salt and pepper, and generously smother with vibrant pesto. Envelop the flavorful concoction in parchment paper, ensuring a snug seal, then elegantly transfer to a prepared baking sheet.
  • Roast in the hot oven until juices are clear, approximately 1 hour and 10 minutes. Place packets on plates and allow to rest for 5 to 10 minutes before unveiling and serving.
