One-pan pesto chicken with potatoes and tomatoes - a family favorite!
Ingredients:
  • 2.5 pounds bone-in, skinless chicken thighs
  • 1.5 pounds baby red potatoes
  • 1 pint cherry tomatoes
  • 0.5 cup pesto
  • 2 tablespoons water
  • 2 teaspoons olive oil
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 425°F (220°C) for a perfect bake.
  • In a large roasting pan, toss together chicken, potatoes, tomatoes, pesto, water, olive oil, salt, and pepper until thoroughly combined.
  • Roast the chicken in the oven until fully cooked and the juices run clear, approximately 45 minutes. Ensure the internal temperature near the bone reaches 165 degrees F (74 degrees C) when measured with an instant-read thermometer.
