Ingredients:
  • 500.00 ml macaroni
  • 36.80 gm oil
  • 500g chicken thigh fillets, sliced
  • 2 tsp mixed Italian herbs (Hoyts)
  • 40.00 gm basil pesto
  • 300ml light thickened cream
  • 500.00 ml baby spinach, chopped
  • 1 tomato, deseeded & chopped
  • 3 spring onions, sliced
  • 250.00 ml grated parmesan
  • 250.00 ml grated tasty cheese
Instructions:
  • Preheat your oven to 180°C.
  • Boil macaroni in ample boiling water until nearly al dente. Drain and set aside.
  • Season chicken with aromatic Italian herbs and sauté in a touch of oil over medium heat until perfectly cooked. Reduce heat to medium-low, then stir in flavorful pesto and rich cream. Simmer briefly until the cream slightly thickens.
  • Combine the spinach, tomato, spring onions, macaroni, and 3/4 of the parmesan in a mixing bowl. Transfer the mixture to a baking dish, then sprinkle with the tasty cheese and the rest of the parmesan.
  • Bake until the top turns a beautiful golden color, around 20 minutes.
