Capsicum, ricotta and chicken sandwiches

Grilled chicken on Turkish bread with peppers and ricotta - a surefire hit!
Ingredients:
  • 2 chicken breast fillets
  • Olive oil cooking spray
  • 400g Turkish bread loaf
  • 250g fresh ricotta cheese
  • 340g jar fire-roasted red pepper strips, drained
  • 125.00 ml basil leaves
Instructions:
  • Slice each chicken breast in half horizontally to create 2 thinner fillets. Lightly coat with oil and season generously with salt and pepper. Heat a frying pan over medium heat, then cook chicken for 3 minutes on each side until fully cooked. Transfer to a plate, cover with foil, and let it rest for 5 minutes before thinly slicing.
  • Preheat a sandwich press. Quarter the Turkish bread and split each piece. Spray both sides of the bread with oil. Spread ricotta on the cut sides of the bread and season with salt and pepper.
  • Add a generous portion of chicken, peppers, and basil on the bread bases. Top with the remaining bread slices to create sandwiches. Cook the sandwiches in batches of 2 for 5 to 6 minutes until golden brown. Serve and enjoy.
