Delicious vegetarian stuffed capsicums filled with creamy ricotta and juicy tomatoes, perfect as a savory appetizer or side dish.
Ingredients:
  • 3 capsicum (we used red, yellow and green), halved, seeds removed
  • 60ml olive oil
  • 150g ricotta cheese
  • 150g cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • Grated rind of 1 lemon
  • 1 garlic clove, crushed
  • 125.00 ml torn basil leaves
Instructions:
  • Preheat your oven to 180°C.
  • Coat the capsicum in half of the oil and place it on a baking tray.
  • Mix together ricotta, tomatoes, onion, lemon zest, garlic, and half of the fresh basil. Use this flavorful mixture to stuff the capsicum.
  • Drizzle the remaining oil over the dish and bake for 20-25 minutes. Finish by garnishing with the remaining basil.
