Transform salt cod and potatoes into savory cakes with fresh parsley and seafood seasoning for a delicious dish.
Ingredients:
  • 1 pound salted cod fish
  • 2 large potatoes, peeled and cubed
  • 1 teaspoon seafood seasoning
  • ground black pepper to taste
  • 0.5 cup chopped fresh parsley
  • 2 eggs, beaten
  • 1 large onion, finely chopped
  • 0.5 cup all-purpose flour
  • 0.25 cup olive oil for frying
Instructions:
  • Place the salt cod in a bowl and cover with cold water. Refrigerate for 8 hours, changing the water every 2 hours.
  • Once the cod has been delicately soaked for 8 hours, refresh it in cold water and proceed to slice it into perfect 3-inch portions.
  • In a large pot, cover cod and potatoes with water. Boil over high heat, then simmer covered on medium-low until potatoes are tender and cod flakes easily with a fork, about 20 minutes. Drain and let cool for 10 minutes.
  • Combine potatoes, cod, seafood seasoning, pepper, parsley in a bowl. Mash roughly with a potato masher. Mix in eggs and onion until combined, leaving some pieces of cod and potato intact.
  • In a shallow bowl, spread out the flour. Shape the cod mixture into golf ball-sized pieces, coat them with flour, and gently flatten them between your palms.
  • In a large skillet over medium-high heat, sizzle cod cakes in olive oil until perfectly golden and crispy on both sides, about 3 minutes each. Rest on a paper towel-covered plate to remove excess oil.
