Indulge in decadent homemade caramel ice cream with Betty - a dreamy and simple treat for your sweet tooth!
Ingredients:
  • 1/2 cup sugar
  • 2 cups whipping cream
  • 1 cup milk
  • 3 egg yolks, slightly beaten
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla
Instructions:
  • In a 2-quart saucepan over medium heat, caramelize sugar until deep golden brown. Remove from heat and carefully pour in 1 cup of whipping cream, stirring constantly (be cautious, as mixture will bubble vigorously). Return to low heat, stir until any solid bits dissolve, then remove from heat.
  • Whisk in the remaining 1 cup of whipping cream, milk, egg yolks, salt, and vanilla until fully combined. Cook over medium heat until just boiling, stirring constantly to prevent curdling. Remove from heat promptly.
  • Transfer the milk mixture into a chilled bowl. Refrigerate without covering for 2 to 3 hours, stirring occasionally until it reaches room temperature. If preferred, the mixture can be refrigerated for up to 24 hours before continuing with the recipe.
  • Transfer the mixture into a 1-quart ice-cream freezer and follow the manufacturer's instructions for freezing.
