Caramel popcorn: a timeless crowd-pleaser for any occasion!
Ingredients:
  • 36.80 gm vegetable oil
  • 125.00 ml popping corn
  • 89.38 gm honey
  • 83.75 gm golden syrup
  • 215.00 gm caster sugar
  • 100g butter, chopped
Instructions:
  • Prepare two baking pans by greasing them with cooking spray. Line the base and sides with parchment paper, leaving a 2cm overhang on the longer sides.
  • In a large saucepan over medium heat, warm the oil. Test the oil by adding 2 corn kernels; it's ready when they spin slowly in a circle. Add the rest of the corn, cover with a lid, and gently shake the pan as the corn begins to pop. Once popping slows down, remove from heat, transfer to a bowl, and discard any unpopped corn.
  • In a saucepan over low heat, combine honey, golden syrup, sugar, and butter. Stir and cook for 6 to 7 minutes until the sugar dissolves. Bring to a boil and cook for another 5 to 6 minutes until light golden. Quickly pour the mixture over popcorn, stir well, then spoon into pans. Let it cool completely before breaking into pieces.
