Indulge in a nostalgic walnut slice, reminiscent of Grandma's timeless recipe.
Ingredients:
  • 125g softened unsalted butter
  • 24.00 gm pure icing sugar, sifted
  • 150g self-raising flour
  • 2 eggs
  • 310g brown sugar
  • 200g walnut
  • 90g desiccated coconut
  • 57.20 gm honey
  • Cocoa powder, to dust
Instructions:
  • Preheat your oven to 180C. Prepare a 20cm square pan by lining it with baking paper, making sure there's plenty overhanging the sides.
  • In a food processor, blend together butter, icing sugar, and 1 cup (150g) flour until a soft dough comes together. Press the dough into the base of the pan and bake until lightly golden, about 15-20 minutes.
  • While the dish is baking, vigorously whisk together eggs and brown sugar until the mixture becomes thick and pale, about 3 minutes. Coarsely chop half of the walnuts, then mix them with coconut, 1/4 tsp salt, and the remaining 2 tbs flour into the egg mixture. Spread the combined mixture over the pastry and bake for 35-40 minutes until the top is lightly golden and set.
  • In a small frypan over medium heat, melt honey until simmering. Add the remaining 1 cup (100g) walnuts and cook, stirring, for 2 minutes until caramelised. Transfer to a baking paper-lined tray to set, then break into shards.
  • Top the slice with caramelized walnuts and a sprinkle of cocoa for a delightful finish.
