Apple walnut spice cake with caramel topping.
Ingredients:
  • 1.5 cups white sugar
  • 0.5 cup shortening
  • 2 eggs
  • 1 teaspoon vanilla
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon nutmeg
  • 0.25 teaspoon salt
  • 3 cups apples - peeled, cored and chopped
  • 0.5 cup chopped walnuts
  • 3 tablespoons milk
  • 2 tablespoons margarine
  • 1.5 cups brown sugar, packed
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and lightly grease an 8x8-inch baking dish.
  • Cream together sugar and shortening in a mixing bowl until smooth. Mix in eggs and vanilla. In a separate bowl, sift together flour, baking soda, cinnamon, nutmeg, and salt. Gradually combine the flour mixture with the egg mixture. Gently fold in apples and walnuts until well mixed. Spoon batter into prepared baking dish.
  • Place the cake in the oven that has been preheated and bake for 40 minutes.
  • Create the topping by combining milk, margarine, and brown sugar in a saucepan over gentle heat. Stir until the brown sugar dissolves and the margarine melts. Once the cake is out of the oven, transfer it to a baking sheet to catch any spills. Drizzle the warm topping over the cake.
  • Place the cake and baking sheet back in the oven and bake for an extra 20 minutes, or until a tester comes out clean. Allow to cool to room temperature before serving.
