Slow cooker Swedish meatballs in creamy sauce - a decadent crowd-pleaser.
Ingredients:
  • 1 pound ground beef
  • 0.25 cup rolled oats
  • 1 egg, lightly beaten
  • 0.5 teaspoon allspice
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon Worcestershire sauce
  • 0.5 teaspoon salt
  • 0.125 teaspoon ground black pepper
  • 2 tablespoons butter
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 teaspoon all-purpose flour
  • 1 cup water
  • 1 teaspoon beef base (such as Better Than Bouillon®)
  • 0.5 teaspoon steak sauce
  • 0.5 cup plain Greek yogurt
Instructions:
  • Combine beef, oats, egg, garlic, allspice, ginger, Worcestershire sauce, salt, and black pepper in a medium-sized bowl. Use your hands to mix until well combined. Roll 2 tablespoons of the mixture into a ball to make approximately 17 meatballs.
  • Heat a large skillet over medium-high heat, add butter, and let it melt. Brown meatballs for 4 to 6 minutes. Reduce heat to medium, flip meatballs, and cook for another 3 minutes. Transfer meatballs to the slow cooker, keeping the skillet grease.
  • Return the skillet to medium-high heat and add 1 tablespoon of butter and flour. Whisk for about 30 seconds until combined. Gradually whisk in water, beef base, and steak sauce, scraping the bottom of the skillet to incorporate any browned bits. Bring the mixture to a boil and whisk until the sauce thickens, approximately 1 minute. Pour the sauce into the slow cooker with the meatballs.
  • Cook covered in a slow cooker on High for 2 hours or on Low for 4 to 5 hours.
  • Transfer 1/4 cup of liquid from the slow cooker to a bowl. Gradually stir in yogurt to prevent curdling. Pour the tempered yogurt into the slow cooker. Season with salt and pepper to taste.
