Caramelized onions and fennel coated in zesty Parmesan, lemon, and fresh parsley.
Ingredients:
  • 2 large onions, halved then sliced lengthwise (root to tip) in 1/4-inch thick slices
  • 2 large fennel bulbs, sliced into 1/4-inch thick slices
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon butter
  • Salt
  • 1/4 cup grated Parmesan
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon lemon zest
  • 2 teaspoons lemon juice
Instructions:
  • In a wide pan over medium-high heat, combine olive oil and butter. Add sliced fennel and onions, stirring to coat. Cook for 10 minutes, then sprinkle with salt. Reduce heat to medium, aiming for caramelization without drying out. Add water if needed to prevent drying.
  • Ensure rich flavor: Stir occasionally, scraping up flavorful browned bits. Cook for 30 minutes to an hour, adjusting based on desired caramelization. Taste intermittently. Onions and fennel should be flavorful without complete browning.
  • When ready to serve, sprinkle freshly grated Parmesan cheese, chopped parsley, lemon zest, and lemon juice over the dish. Adjust seasoning with more lemon juice if desired.
