Savory sweet potato hash with a kick of jalapeno, caramelized onions, and a hint of whiskey sweetness.
Ingredients:
  • 4 ounces bacon, cut into 1-inch pieces
  • 0.5 large yellow onion, chopped
  • 0.5 bulb fennel, chopped
  • 1 sweet potato, cut into small cubes
  • 0.5 jalapeno pepper, seeded and minced
  • 0.25 cup whiskey (such as Jack Daniel's®)
  • 0.25 cup brown sugar
Instructions:
  • Cook the bacon in a large skillet over medium-high heat until crispy and browned, for about 10 minutes. Use a slotted spoon to transfer the bacon to a plate lined with paper towels, leaving the delicious drippings in the skillet.
  • Lower the heat to medium. Sauté onion and fennel in the flavorful bacon drippings until beautifully caramelized, around 10 minutes. Introduce sweet potato, cover the skillet, and cook until the sweet potato is tender and has a glorious golden hue, approximately 10 minutes.
  • Turn up the heat to medium-high and pour whiskey into the skillet. Bring it to a boil while using a wooden spoon to scrape off the flavorful browned bits from the bottom of the pan. Stir in the bacon with the vegetable mixture, then add brown sugar and mix well. Lower the heat to medium and cook until the whiskey is absorbed and the liquid turns caramel-colored, which should take about 5 minutes. Season with salt and pepper to taste.
