Caribbean Pork Roast

Elevate your pork loin with exotic island flavors for a unique and delicious roast.
Ingredients:
  • 1 pork boneless double center loin roast, 2 to 2 1/2 pounds
  • 1 cup orange juice
  • 1/2 cup lime juice
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons red pepper sauce
  • 3/4 teaspoon ground allspice
  • 1 medium green bell pepper, cut into eighths
  • 1 medium onion, cut into fourths
  • 4 garlic cloves, crushed
  • Salt and pepper to taste
  • 1 1/2 teaspoons sugar
Instructions:
  • Trim the fat off the pork. Use a meat fork or skewer to pierce the pork all over. Put the pork in a sealed plastic bag. Combine all ingredients, except salt, pepper, sugar, and 1/2 teaspoon salt, in a blender or food processor, blend until smooth. Pour the mixture over the pork in the bag. Seal the bag and place it in the fridge for at least 4 hours but no longer than 24 hours, flipping the bag occasionally.
  • Preheat oven to 325°F. Take the pork out of the marinade and refrigerate the marinade for later. Season the pork with salt and pepper to your liking. Place the pork on a rack in a shallow roasting pan. Insert a meat thermometer into the thickest part of the pork, making sure it's not touching the fat.
  • Roast pork in the oven until thermometer reads 155°F, then let it rest covered until thermometer reads 160°F.
  • In a 1 1/2-quart saucepan, combine the marinade, sugar, and 1/2 teaspoon of salt. Bring to a boil, then simmer uncovered for about 5 minutes, stirring occasionally, until the mixture slightly thickens. Serve the sauce with the pork.
