Cuban-style carne con papas: Succulent beef and potatoes bursting with flavor, quickly cooked in a pressure cooker for a delicious meal.
Ingredients:
  • 2 white potatoes
  • 0.5 green bell pepper, seeded and chopped
  • 0.5 small white onion, chopped
  • 3 cloves garlic, crushed
  • 1.25 teaspoons ground cumin, divided
  • 0.25 teaspoon salt
  • 0.125 cup olive oil
  • 2 tablespoons achiote powder
  • 2 (8 ounce) cans tomato sauce
  • 2 pounds beef stew meat, cut into 1 inch cubes
  • 4 cups water, or as needed
  • 1 cup white wine
  • 6 cubes beef bouillon
Instructions:
  • In a blender, blend together bell pepper, onion, garlic, 1/4 teaspoon cumin, and salt. While pulsing, gradually pour in 1/8 cup of olive oil through the top of the blender until smooth. Set the mixture aside.
  • In a pressure cooker over medium heat, warm up 1 tablespoon of olive oil. Sauté the pepper and onion mixture for 1 minute, then mix in the achiote powder and remaining 1 teaspoon of cumin. Cook for 1 more minute, then add the tomato sauce.
  • Once simmering, gently introduce the beef and let it simmer for 5 minutes. Introduce the potatoes. Add water and wine, followed by the bouillon cubes. Bring to a boil and cook for 1 minute. Add more water if needed to cover everything.
  • Seal the pressure cooker with the lid and cook according to the manufacturer's instructions at 15 pounds of pressure for 30 to 45 minutes.
