Versatile tomatillo sauce pairs perfectly with pork, beef, or chicken. Adjust seasonings to taste. Serve over rice for a flavorful Mexican meal!
Ingredients:
  • 4 large boneless pork chops, fat trimmed and reserved
  • 0.25 teaspoon ground black pepper, or to taste
  • 0.5 teaspoon garlic powder, or to taste
  • 0.5 teaspoon seasoning salt, or to taste
  • 1 lime, cut into 4 wedges
  • 10 tomatillos, husked and cut in half
  • 1 tomato, quartered
  • 2 jalapeno peppers, seeded and halved
  • 3 dried red chile peppers, chopped
  • 1 clove garlic
  • 0.5 teaspoon salt, or to taste
Instructions:
  • Cut the pork chops into strips and generously season with pepper, garlic powder, and seasoning salt. Finish by squeezing fresh lime juice over the seasoned strips.
  • Preheat skillet over medium heat. Add fat, stirring until it coats the pan. Remove excess fat, then add seasoned meat and brown for about 5 minutes.
  • Simultaneously prepare the green sauce by simmering tomatillos, tomato, jalapenos, and dried chilies until soft. Drain excess liquid, then blend with garlic and salt until smooth.
  • Cover the meat in the pan with the sauce and let it simmer for 15 minutes to enhance the flavors. Taste and season with salt and pepper to your liking.
