Vibrant noodle salad with a zesty Thai dressing.
Ingredients:
  • 250g packet dried rice stick noodles
  • 2 small carrots
  • 2 small zucchini
  • 1 red capsicum
  • 1 leek
  • 2 sticks celery
  • 100g snow pea sprouts, trimmed
  • 4 red radishes, thinly sliced
  • 82.50 ml fresh coriander leaves
  • 82.50 ml fresh mint leaves, shredded
  • 1 red chilli, finely chopped
  • 2 limes, juiced
  • 42.00 gm sweet soy sauce
  • 24.40 gm fish sauce
  • 20.00 ml mirin
  • 16.00 gm brown sugar
Instructions:
  • Prepare noodles according to the instructions on the package. Once cooked, drain and rinse with cold water, then transfer to a large bowl.
  • Slice the carrots, zucchini, capsicum, leek, and celery into thin strips, then combine them with the noodles, sprouts, radishes, and herbs.
  • Prepare the dressing by combining all ingredients in a jug and whisking until well mixed using a fork.
  • Drizzle dressing over salad. Mix thoroughly and enjoy.
