Carrot and ginger soup with yoghurt

Cozy up with a comforting carrot ginger soup topped with creamy yogurt for a perfect winter warmer!
Ingredients:
  • Olive oil spray
  • 1 large brown onion, coarsely chopped
  • 2 tsp finely grated fresh ginger
  • 5.00 gm ground cumin
  • 500g sweet potato (kumara), peeled, coarsely chopped
  • 4 large (about 600g) carrots, peeled, coarsely chopped
  • 1L chicken style liquid stock or vegetable liquid stock
  • 130g (1/2 cup) low-fat natural yoghurt
  • Chopped fresh chives, to serve
Instructions:
  • In a large saucepan over medium heat, spritz with olive oil spray. Sauté the onion until soft, about 5 minutes. Stir in garlic, ginger, and cumin and cook until fragrant, about 1-2 minutes.
  • Combine sweet potato, carrot, and stock in the pot and increase the heat to high until it boils. Cover, lower the heat to low, and simmer for 15-20 minutes until vegetables are soft. Allow it to cool slightly before serving.
  • Blend half of the sweet potato mixture in a blender until smooth. Transfer the mixture to a clean saucepan. Repeat with the remaining sweet potato mixture. Heat the soup on low, stirring until warmed through. Season with pepper.
  • Divide the soup into serving bowls and garnish with yogurt and chives before serving.
