Carrot and ginger soup

Elevate your health with a flavorful carrot soup packed with immune-boosting ginger and vitamin C.
Ingredients:
  • 1 brown onion, finely chopped
  • 5cm piece ginger, peeled, finely chopped
  • 1kg carrot
  • 1020.00 gm chicken style liquid stock
  • Sour cream, to serve
  • Chopped dill leaves, to serve
Instructions:
  • In a saucepan over medium heat, warm up the oil. Add in the onion, ginger, and garlic. Lower the heat to medium-low and cook while stirring occasionally for 8 to 10 minutes until the onion is soft.
  • Combine carrots, flavorful stock, and 2 cups of water in a saucepan. Let it simmer partially covered for 35 to 40 minutes until the carrots are very tender. Then, remove from heat and set aside.
  • Blend the soup in batches in a food processor or blender until smooth. Transfer back to the saucepan and gently warm it over low heat.
  • Pour the soup into bowls and garnish with a dollop of sour cream and a sprinkle of fresh dill before serving.
