Chilled carrot and ginger soup

Refreshing summer carrot soup.
Ingredients:
  • 10g unsalted butter
  • 1 small onion, finely chopped
  • 4cm piece ginger, peeled, grated
  • 6 large carrots (about 600g), halved lengthways, cut into 1cm pieces
  • 750ml chicken stock
  • Coriander sprigs, to serve
  • Lime wedges, to serve
Instructions:
  • Combine butter and oil in a large saucepan over gentle heat until melted. Sauté onion, ginger, and carrot for 10 minutes, then pour in stock along with 3 cups (750ml) water.
  • Bring mixture to a boil over medium-high heat before reducing to medium and simmering for 10 minutes until carrots are soft. Let it cool slightly before blending in batches to a smooth consistency. Chill in the refrigerator until cold.
  • For serving, add lime juice, sprinkle with freshly ground black pepper, and garnish with coriander sprigs. Accompany with lime wedges and avocado-spread rice cakes if desired.
