Chilled summer soup with roasted carrots, tomatoes, fresh mint, and vegetable broth - a vibrant, refreshing meal option.
Ingredients:
  • 1 pound carrots
  • 4 large vine-ripened tomatoes, seeded and quartered
  • 2 tablespoons olive oil, divided, or as needed
  • kosher salt to taste
  • 0.5 onion, finely chopped
  • 1 stalk celery, finely chopped
  • 1 (32 fluid ounce) container vegetable broth
  • 0.25 cup fresh mint leaves
  • 1 tablespoon table cream
  • 1 teaspoon fresh mint leaves, or to taste
Instructions:
  • Preheat the oven to a toasty 400°F (200°C).
  • In a large roasting dish, lovingly arrange the carrots and tomatoes. Then, generously drizzle them with 1 tablespoon of extra-virgin olive oil and sprinkle with kosher salt to bring out their flavors.
  • Roast in the oven until tender, approximately 30 minutes.
  • As the vegetables roast, warm up 1 tablespoon of olive oil in a stockpot over medium heat. Sauté onion until tender and translucent for about 3 to 4 minutes. Add celery and cook until soft for about 4 minutes, being careful not to burn the onions. Pour in the vegetable broth and simmer on low heat to keep warm.
  • Take the vegetables out of the oven and stir in the tomatoes to the simmering broth. Allow the carrots to cool for 5 minutes.
  • Coarsely chop carrots and toss them into the simmering broth. Sprinkle in a touch more kosher salt for flavor. Bring the soup to a boil, then lower the heat and let it simmer to blend the flavors for approximately 20 minutes.
  • Transfer the soup to a large blender, working in batches if needed, and add 1/4 cup of mint. Secure the blender lid with a potholder and pulse a few times before blending until smooth. Once blended, transfer the soup to a large serving bowl or container.
  • Refrigerate the soup for a minimum of 2 hours until thoroughly chilled. Before serving, top with 1 teaspoon of fresh mint leaves and a swirl of table cream.
