Whip up a refreshing Pineapple Yogurt Salad with raisins, carrots, and pineapple tidbits, served chilled for six.
Ingredients:
  • 0.5 cup raisins
  • 2 cups pineapple tidbits, drained
  • 1 pound carrots, grated
  • 1 cup pineapple yogurt
  • 0.125 teaspoon salt
Instructions:
  • Place plump raisins in a bowl and cover with hot water. Let them luxuriate for 30 minutes, then elegantly drain and gently pat dry.
  • Mix together the raisins, pineapple, and carrots in a bowl.
  • Combine the creamy yogurt, sweet sugar, and a pinch of salt. Gently fold this mixture into the shredded carrots until well combined. Cover and chill in the refrigerator.
