Carrot-Pineapple Salad

Brighten up your salad with zesty orange gelatin.
Ingredients:
  • 1 cup boiling water
  • 1 package (4-serving size) orange-flavored gelatin
  • 1/2 cup cold water
  • 1/8 teaspoon salt
  • 1 can (8 ounces) crushed pineapple in syrup, undrained
  • 1 cup shredded carrot (2 medium)
  • Salad greens, if desired
Instructions:
  • In a medium glass or plastic bowl, pour boiling water over the gelatin and stir until completely dissolved.
  • Gently fold in cold water, salt, and pineapple. Chill in the refrigerator for 20 to 40 minutes until the mixture resembles the texture of unbeaten egg whites.
  • Mix in the shredded carrots and then transfer the mixture into a 3-cup mold or 6 individual molds. Chill in the refrigerator for approximately 3 hours until set, then remove from the molds. Serve decorated with fresh salad greens.
