Lime, Pineapple and Carrot Salad

Cool and tangy fruit salad with lime gelatin.
Ingredients:
  • 1 cup boiling water
  • 1 package (3 ounces) lime- or lemon-flavored gelatin
  • 1/2 cup cold water
  • 1 can (8 ounces) crushed pineapple, undrained
  • 1/2 cup shredded carrot
  • Mayonnaise or whipped cream, if desired
Instructions:
  • In a medium bowl, pour boiling water over gelatin and stir until completely dissolved. Add cold water and pineapple, then refrigerate for about 45 minutes until thickened but not fully set.
  • Brush six 1/2-cup salad molds lightly with vegetable oil. Stir in carrots into thickened gelatin and pour the mixture into the molds. Chill in the refrigerator for about 4 hours or until set.
  • To unmold the salads, briefly dip the molds in hot water for 10 seconds. Place a salad plate upside down on each mold, flip both over, and gently remove the mold. Finish by topping the salads with mayonnaise.
